LEMON CHICKEN
Serves 2

2 large boneless/skinless chicken breasts
2/3 cup flour
1 egg 1 cup milk
¼ Iceberg lettuce 1 lemon
East-West Tropical Lemon Sauce

Combine the egg and milk together in a shallow pan and mix well. Salt and pepper the chicken breast. Coat both sides of each chicken breast with this egg/milk mixture and dip into the flour till well covered. Without salt and peppering, repeat this procedure a second time. Heat some oil in a large fry pan until hot.


Fry the chicken breasts till done. Slice the iceberg lettuce into thin strips and lay on a serving platter. Thinly slice the cooked chicken breasts and lay onto the bed of lettuce. Garnish with lemon slices and pour heated East-West Tropical Lemon Sauce over the chicken breasts just prior to serving.
